More of the Simple Curried Egg Filling Please

The new recipe that I tried was so simple to execute. Now that the filling has been perfected, I can use it as a stuffing, a topping, or even a snack!

My Story

As I was exploring the Quick & Easy Recipes on SideChef, a home cooking platform where I found my favorite eggplant and ground meat recipe, I came across something for egg sandwiches.


Inspiring Recipe

What attracted me to the recipe for Curried Egg Sandwiches was that all the ingredients were readily available at home.

First Try

Since I had the ingredients listed on the recipe already at home, I was able to make this dish with little planning, in order to supplement what I was going to have for dinner.

Ingredients to Use

To keep things easy, I used the exact amount for each ingredient as listed on the recipe. For the paprika, I just sprinkled some onto the eggs.

Steps to Prepare

With just two steps in the main instructions, I had no reason to deviate from them. However, to boil the eggs beforehand, I did use half an inch of water because I put them in a small saucepan. Lastly, I cut the sandwiches in half, so they would be easier to eat.

Time to Eat

Since I made these sandwiches ahead of time, once the other courses of my dinner were done, I was ready to serve these as well.

Though the egg mixture needed more salt, the curry flavor stood out nicely. My younger son even said the following to his brother:

It tastes good.

Second Try

For the second attempt, my goal was to ensure that the eggs were salted.

Ingredients to Use

Since I didn’t need as many sandwiches as noted on the default recipe, I scaled down everything and used the following, including introducing salt:

  1. 2 boiled eggs
  2. 4 slices of bread
  3. 1 tablespoon + 1 teaspoon of mayonnaise
  4. 2/3 teaspoon of curry powder
  5. Paprika, to taste
  6. Salt, to taste

Steps to Prepare

From a process perspective, I used a little less than half an inch of water to boil the eggs this time, since I didn’t want it to overflow in the small saucepan.

As for the salt, I just added some to the top of the eggs. After tasting the mixture, I was happy with it, so I didn’t need to add more.

Lastly, I wanted the sandwiches to be smaller, so I just quartered them.

Time to Eat

As I did before, I served the sandwiches with other courses for dinner.

With salt, the egg sandwiches certainly tasted better!


As I’m planning to make a version of this recipe again, below is what I’m going to try next time:

Continuous Improvement

  1. Halve the slices of bread in or remove them altogether from the recipe.
